Description

A creamy, protein-packed white chicken chili made with just five ingredients in a slow cooker, perfect for busy weeknights and meal prep.


Ingredients

  • 1 1/2 pounds boneless skinless chicken breasts
  • 2 cans (15 ounces each) white beans, drained and rinsed
  • 1 can (4 ounces) diced green chiles
  • 4 cups chicken broth
  • 4 ounces cream cheese, softened

  • Instructions

    1. Place chicken breasts in the crockpot.

    2. Add white beans and diced green chiles then pour chicken broth over.

    3. Cook on low for 6–7 hours or high for 3–4 hours.

    4. Remove chicken and shred with two forks, then return to the pot.

    5. Stir in cream cheese and cook until fully melted and creamy.

    6. Adjust thickness or seasoning as desired, then serve.
