1. In a bowl beat together softened cream cheese and pumpkin puree until smooth.
2. Stir in powdered sugar, pumpkin pie spice, and vanilla extract until fully combined.
3. Fold in crushed graham crackers until the mixture is thick enough to shape.
4. Roll the mixture into 1-inch balls and place on a parchment-lined tray.
5. Chill the balls in the refrigerator for at least 30 minutes.
6. Melt white chocolate slowly using a double boiler or microwave in short intervals.
7. Dip each chilled truffle in melted white chocolate, allowing excess to drip off.
8. Place coated truffles back on the parchment and decorate with garnishes as desired.
9. Refrigerate for 20–30 minutes until the chocolate shell is set.
10. Store truffles in an airtight container in the refrigerator up to five days.
