4. Pour the wet ingredients into the dry ingredients and stir until just combined
5. Fold in the diced apples gently into the batter
6. Divide the batter evenly among the muffin cups filling each three quarters full
7. Bake for 18 to 22 minutes or until a toothpick inserted into the center comes out clean
8. Let the muffins cool in the pan for five minutes then transfer to a wire rack to cool completely
