  • 8 large eggs
  • 1/4 cup cream or milk
  • 1/2 cup crumbled goat cheese
  • 1 tablespoon olive oil or butter
  • 2 tablespoons chopped fresh herbs (dill, parsley, or chives)
  • salt and black pepper to taste

  • Instructions

    1. Preheat the oven to 375°F (190°C) and grease a 9-inch ceramic baking dish.

    2. Heat olive oil or butter in a skillet and sauté asparagus for 3 to 5 minutes until tender and bright green.

    3. In a mixing bowl whisk eggs with cream or milk, salt, and pepper until just combined.

    4. Fold in the sautéed asparagus, half of the goat cheese, and chopped herbs.

    5. Pour the mixture into the prepared baking dish and sprinkle the remaining goat cheese on top.

    6. Bake for 22 to 25 minutes until the edges are set and the center jiggles slightly.

    7. Let the frittata rest for 5 minutes before slicing and serving.
