1. Wash and dry the mixed greens and place in a large bowl
2. Thinly slice the apples, toss with a little lemon juice if desired to prevent browning
3. Thinly slice the red onion and set aside
4. In a dry skillet over medium heat, toast the pecans or walnuts for 3 to 4 minutes until fragrant then cool
5. In a small bowl or jar, whisk together olive oil, apple cider vinegar, honey or maple syrup, Dijon mustard, salt, and pepper until emulsified
6. Drizzle two thirds of the dressing over the greens and toss lightly
7. Add apple slices, red onion, dried cranberries, and crumbled feta to the greens
8. Gently fold in the toasted nuts
9. Transfer the salad to a serving platter, sprinkle remaining feta and nuts on top, and serve with the remaining dressing on the side
