Description

A creamy, cheesy casserole combining shredded rotisserie chicken and fresh zucchini for an easy weeknight meal. This comforting dish bakes to golden perfection and makes warming leftovers.

  • 3 cups shredded rotisserie chicken
  • 2 medium zucchinis, thinly sliced
  • 1 cup heavy cream or half-and-half
  • 1/2 cup finely chopped yellow onion
  • 2 cloves garlic, minced
  • 1 1/2 cups shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1 tablespoon olive oil or butter
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup breadcrumbs or grated Parmesan cheese (optional)

  • Instructions

    1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.

    2. Heat olive oil or butter in a skillet, sauté onion until translucent, add garlic and cook one minute.

    3. In a bowl whisk together heavy cream, Italian seasoning, salt, and pepper.

    4. Stir shredded chicken into the cream mixture.

    5. Fold in half of the mozzarella and half of the cheddar cheese.

    6. Layer a thin coat of the chicken mixture in the prepared dish.

    7. Arrange half of the zucchini slices over the layer, then spread half of the chicken mixture over zucchini.

    8. Repeat layers ending with remaining cheeses and optional breadcrumbs or Parmesan on top.

    9. Cover with foil and bake 20 minutes, remove foil and bake an additional 15 minutes until golden and bubbly.

    10. Let rest 5–10 minutes before serving to allow the casserole to set.
