3. Warm tortillas in the microwave for 20 seconds under a damp paper towel to make them pliable.
4. Place 2 to 3 tablespoons of the chicken mixture on each tortilla and roll tightly, placing them seam-side down on the baking sheet.
5. Brush or spray each taquito lightly with olive oil or avocado oil to promote browning.
6. Bake for 15 to 20 minutes, flipping halfway through, until golden brown and crispy.
7. Let stand for 2 to 3 minutes on a wire rack before serving to maintain crispiness.
