  • 1 cup panko breadcrumbs
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 tsp dried Italian seasoning
  • 1/2 tsp garlic powder
  • Salt and black pepper to taste
  • 2 tbsp olive oil or melted butter
  • Optional: 1 tbsp chopped fresh parsley
  • Optional: 1/2 tsp smoked paprika or cayenne
  • Optional: marinara sauce for serving
  • Optional keto option: 1/2 cup almond flour

  • Instructions

    1. Preheat oven to 400°F (200°C) and place a wire rack on a parchment-lined baking sheet.

    2. In a shallow bowl, season flour with salt and pepper.

    3. In a second bowl, beat the eggs until smooth.

    4. In a third bowl, combine panko, Parmesan, Italian seasoning, and garlic powder.

    5. Pat chicken breasts dry. Dredge each in flour, dip in egg, then press into the breadcrumb mixture to coat evenly.

    6. Arrange coated chicken on the wire rack and brush tops with olive oil or butter.

    7. Bake for 25–30 minutes until internal temperature reaches 165°F and crust is golden brown.

    8. Let chicken rest 5 minutes before serving to retain juiciness.

    9. Garnish with parsley and serve with lemon wedges and marinara sauce if desired.
