1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly oil a baking dish
2. Pat chicken dry and season both sides with salt, pepper, garlic powder, and Italian seasoning
3. Set up three bowls: flour, beaten eggs, and a mixture of panko breadcrumbs, Parmesan, and olive oil or melted butter
4. Dredge each chicken breast in flour, dip into eggs, then press into the breadcrumb mixture until evenly coated
5. Place coated chicken breasts on the prepared baking sheet
6. Bake for 22–25 minutes or until the internal temperature reaches 165°F (74°C)
7. For extra crispness, broil for 2–3 minutes, watching closely to prevent burning
8. If using, top each breast with mozzarella or provolone and return to the oven until cheese melts
9. Let chicken rest for 5 minutes before serving and garnish with chopped parsley
