Balsamic Roasted Beet Salad with Goat Cheese & Walnuts

Description

This colorful salad combines oven-roasted beets with creamy goat cheese, toasted walnuts, and a tangy balsamic dressing for a nutritious dish that works year-round. It’s easy to prepare and perfect as a vibrant side or light main.


Ingredients

  • 4 medium beets
  • 2 tablespoons olive oil
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon honey or maple syrup
  • 4 ounces goat cheese crumbled
  • 1/2 cup toasted walnuts
  • 1/4 cup raisins or dried cranberries
  • salt and pepper to taste

  • Instructions

    1. Preheat oven to 400°F (200°C).

    2. Wash and trim beets without peeling.

    3. Toss beets in olive oil, wrap in foil and place on a baking sheet.

    4. Roast for 40–50 minutes until tender.

    5. Let beets cool, then rub off skins and slice into wedges.

    6. In a bowl whisk together balsamic vinegar, honey and a pinch of salt and pepper.

    7. Place beets on a platter, sprinkle with goat cheese, walnuts and raisins.

    8. Drizzle dressing over salad and toss gently before serving.
