1. Preheat oven to 375°F (190°C).
2. Set up three bowls: flour seasoned with salt and pepper, beaten eggs, and panko breadcrumbs.
3. Dredge chicken pieces in flour, dip in eggs, then coat with panko.
4. Place coated chicken on a parchment-lined baking sheet, spray lightly with cooking oil, and bake 18–20 minutes until golden and cooked through.
5. Meanwhile, mix mayonnaise, sweet chili sauce, and sriracha in a bowl to make bang bang sauce.
6. Slice slider buns in half horizontally and place bottoms in a greased 9×13 baking dish.
7. Arrange baked chicken on buns, drizzle with bang bang sauce, and sprinkle with mozzarella.
8. Cover with top buns, brush with melted butter, and bake at 350°F (175°C) for 10–12 minutes, removing foil for the last 3 minutes.
9. Garnish with chopped green onions or cilantro if desired, slice between buns, and serve warm.
