This roasted chicken recipe features fresh basil, parsley, rosemary, and garlic under a lemon butter glaze for crispy skin and juicy meat. It’s an easy main course perfect for family dinners.

Instructions
1. Preheat oven to 425°F (220°C). Rinse and pat the chicken dry.
2. In a bowl, mix butter with basil, parsley, rosemary, garlic, lemon zest, salt, and pepper.
3. Loosen the chicken skin and spread half the herb butter underneath. Rub the rest over the skin.
4. Stuff the cavity with lemon halves and extra herb sprigs. Tie legs with twine.
5. Place chicken breast-side up on a rack in a roasting pan. Drizzle with olive oil and add chicken stock to the pan.
6. Roast for 1 hour 15–30 minutes, basting every 20–25 minutes, until breast reads 165°F (74°C).
7. Remove from oven and rest 10–15 minutes under foil.
8. Mix melted butter with lemon juice and brush over chicken before carving.
