1. In a bowl, combine pineapple juice, coconut aminos, garlic, ginger, lime juice, smoked paprika, salt, and pepper. Add chicken and marinate for 20–30 minutes.
2. Whisk extra pineapple juice, coconut aminos, lime juice, honey or date paste, garlic, and smoked paprika in a small pan. Simmer 5–7 minutes until thickened, then set half aside.
3. Heat a skillet or grill pan over medium-high heat and brush with oil. Sear chicken 4–5 minutes per side, brushing with glaze during the last minutes, until cooked through.
4. Rest chicken 2–3 minutes, then slice or shred and toss with reserved glaze.
5. Wash and dry lettuce leaves. Arrange on a platter as cups for filling.
6. Place a portion of BBQ chicken in each lettuce leaf. Top with diced pineapple, green onions, and sesame seeds.
7. Drizzle extra glaze over each wrap and garnish with cilantro or chili flakes if desired.
8. Serve immediately or pack components separately for meal prep, assembling just before eating.
