1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper
2. Scrub and dry the sweet potatoes, then prick each several times with a fork
3. Rub the potatoes with olive oil and sprinkle lightly with sea salt
4. Bake for 40–45 minutes until tender and easily pierced with a fork
5. While potatoes bake, shred the cooked chicken breast with two forks
6. Warm the shredded chicken in a pan over low heat with sugar-free BBQ sauce and minced garlic until heated through
7. Slice each baked sweet potato open lengthwise and fluff the flesh with a fork
8. Spoon in the BBQ chicken mixture and return to the oven for 5 minutes to meld flavors
9. Remove from oven and garnish with chopped green onions or cilantro before serving
