Ingredients
Instructions
1. Preheat the oven to 375°F (190°C) and line a 12-cup muffin pan with paper liners or lightly grease the cups.
2. In a large bowl whisk together the flour, baking powder, and salt until evenly combined.
3. In a separate bowl whisk the melted butter, sugar, eggs, orange juice, milk, orange zest, and vanilla extract until smooth.
4. Pour the wet ingredients into the dry ingredients and stir gently until just combined, taking care not to overmix.
5. Toss the cranberries with a spoonful of flour, then fold them into the batter until evenly distributed.
6. Divide the batter among the muffin cups, filling each about three-quarters full.
7. Bake for 18–22 minutes or until the tops are golden and a toothpick inserted in the center comes out clean.
8. Let the muffins cool in the pan for five minutes, then transfer to a wire rack to cool completely or serve warm.
