These homemade vegan granola bars combine oats, cocoa, nut butter, and plant protein into a chewy, chocolatey snack. They require no baking and are perfect for meal prep, post-workout fuel, or an on-the-go treat.

1. Line an 8×8-inch pan with parchment paper and grease lightly.
2. In a bowl, combine rolled oats, cocoa powder, protein powder, and salt.
3. Melt nut butter, maple syrup, coconut oil, and vanilla extract together until smooth.
4. Pour the melted mixture over dry ingredients and stir until fully combined.
5. Fold in optional chocolate chips, nuts, or coconut if desired.
6. Press the mixture firmly into the prepared pan to create an even layer.
7. Refrigerate for at least 1–2 hours or until firm.
8. Lift the set slab using parchment overhang and cut into bars.
9. Store in an airtight container in the fridge for up to one week or in the freezer for up to three months.
