4. Add shredded chicken to the mixture and stir until evenly coated.
5. Fill each pepper half with the buffalo chicken mixture and top with blue cheese if desired.
6. Bake for 12–15 minutes until cheese is melted and peppers are tender but still crisp, then garnish with green onions and serve.
