Description

This easy pumpkin roll made with a boxed cake mix delivers a soft spiced sponge wrapped around a rich cream cheese filling. Perfect for fall gatherings, it offers bakery-quality flavor with minimal effort.

  • 3/4 cup canned pumpkin puree
  • 3 large eggs
  • 1/3 cup water or milk
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon cinnamon
  • dash of salt
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese softened
  • 4 tablespoons butter softened
  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • powdered sugar for dusting

  • Instructions

    1. Preheat oven to 375°F and line a 10×15-inch jelly roll pan with greased parchment paper

    2. Beat cake mix, pumpkin puree, eggs, water, spices, salt, and vanilla until smooth

    3. Spread batter evenly in pan and bake 12 to 14 minutes until center springs back

    4. Dust a clean kitchen towel with powdered sugar and invert warm cake onto towel, peel off parchment

    5. Roll cake and towel together from short end and let cool completely

    6. Beat cream cheese, butter, powdered sugar, and vanilla until fluffy and chill for 10 minutes

    7. Unroll cooled cake, spread filling evenly, then re-roll without towel

    8. Wrap roll and refrigerate at least one hour, then dust with powdered sugar before slicing
