  • 1 pack instant ramen noodles
  • 1 can chicken breast (1012 oz), drained
  • 23 tbsp sweet chili sauce
  • 1 clove garlic, minced
  • 1 small onion, sliced
  • 1 small carrot, julienned
  • ½ cup bell peppers, sliced
  • 1 tsp sesame oil
  • 12 tsp soy sauce (optional)
  • Optional toppings: sliced green onion, sesame seeds, lime wedge, fried egg

  • Instructions

    1. Bring a pot of water to a boil and cook ramen noodles for about 3 minutes until just tender. Drain and set aside.

    2. Heat sesame oil in a skillet over medium-high heat. Add minced garlic and sliced onion; sauté until fragrant, about 30 seconds.

    3. Add julienned carrot and sliced bell peppers; stir-fry for 2–3 minutes until crisp-tender.

    4. Add drained, shredded canned chicken to the skillet and warm through, seasoning lightly with soy sauce if desired.

    5. Add the cooked noodles to the skillet and toss gently with chicken and vegetables.

    6. Drizzle sweet chili sauce over the mixture and toss until noodles are evenly coated and glossy.
