  • 1 teaspoon ground cinnamon

  • 2 medium apples, peeled and diced
  • 1 tablespoon butter
  • 2 tablespoons brown sugar
  • 1/2 teaspoon cinnamon
  • 1 teaspoon cornstarch
  • 1/2 cup all-purpose flour
  • 1/4 cup brown sugar
  • 2 tablespoons rolled oats
  • 3 tablespoons cold butter, cubed
  • 1/2 cup caramel sauce

  • Instructions

    1. Preheat oven to 350 degrees F and line baking sheets with parchment paper

    2. Cream butter, brown sugar, and granulated sugar until light and fluffy

    3. Beat in egg and vanilla until combined

    4. Whisk flour, baking powder, baking soda, cinnamon, and salt then add to wet ingredients

    5. Chill dough for 20 to 30 minutes

    6. Melt butter in a pan, add diced apples, brown sugar, and cinnamon and cook until apples soften

    7. Stir in cornstarch and cool the filling completely

    8. Combine flour, brown sugar, oats, and salt and cut in cold butter to form crumbs

    9. Scoop dough into 2-tablespoon balls and flatten slightly on sheets

    10. Top each with 1 teaspoon apple filling and sprinkle with crumble

    11. Bake 12 to 14 minutes until edges are golden

    12. Cool cookies completely then drizzle with warmed caramel sauce
