Description

These carrot cake protein bites offer a wholesome, no-bake snack packed with oats, carrots, and protein to fuel your day. Easy to make and naturally sweetened, they double as healthy energy bites or wholesome dessert treats.


Ingredients

  • 1 1/2 cups rolled oats
  • 1 cup shredded carrots
  • 810 pitted Medjool dates
  • 1/2 cup vanilla protein powder
  • 1/2 cup almond butter
  • 2 tablespoons maple syrup
  • 1 teaspoon ground cinnamon
  • 1/4 cup shredded coconut
  • 1/4 teaspoon sea salt
  • 1/2 teaspoon vanilla extract

  • Instructions

    1. Combine oats, dates, and shredded carrots in a food processor and pulse until coarse.

    2. Add protein powder, nut butter, maple syrup, cinnamon, salt, and vanilla extract and blend until sticky.

    3. Stir in shredded coconut or other mix-ins by hand if using.

    4. Roll mixture into 1-inch balls and place on a tray.

    5. Refrigerate for 20 to 30 minutes to firm up before serving.

    6. Store in an airtight container in the fridge for up to one week or freeze for up to one month.
