1. Preheat oven to 375°F (190°C) and grease a deep casserole dish or line with parchment paper
2. Heat olive oil in a skillet over medium heat, season chicken with salt, pepper, thyme, and oregano, and sauté until lightly golden, about 5–6 minutes
3. In a bowl, whisk heavy cream with minced garlic and a pinch of black pepper
4. Layer half of the potato slices in the dish, top with half of the chicken, drizzle with half of the cream mixture, and sprinkle with half of the cheese
5. Repeat layers with remaining potatoes, chicken, cream, and cheese, finishing with cheese on top
6. Cover loosely with foil and bake for 35 minutes, then remove foil and bake for 15–20 minutes more until cheese is golden and potatoes are tender
7. Let the bake rest for 5 minutes before serving to allow the sauce to thicken
