1. Preheat oven to 375°F and grease a 9×13-inch baking dish.
2. In a saucepan, combine quinoa and chicken broth. Bring to a boil, reduce heat, cover, and simmer 15 minutes until liquid is absorbed, then fluff.
3. In a bowl, mix cooked quinoa, shredded chicken, black beans, corn, salsa, diced tomatoes, chili powder, cumin, garlic powder, onion powder, salt, and pepper.
4. Spread half of the quinoa mixture in the baking dish, sprinkle with half of the cheese, then add the remaining mixture and top with remaining cheese.
5. Bake uncovered for 20–25 minutes until cheese is melted and bubbly; broil 2–3 minutes for a golden top if desired.
6. Let rest 5 minutes, then garnish with cilantro, avocado, Greek yogurt, jalapeños, and lime before serving.
