2. In a large bowl stir together shredded coconut, sweetened condensed milk, and vanilla extract until combined
3. In a separate bowl whip egg whites and salt until frothy but not stiff
4. Gently fold the whipped egg whites into the coconut mixture until evenly incorporated
5. Use a tablespoon or small cookie scoop to form mounds of mixture on the prepared baking sheet about 1 inch apart
6. Bake for 20 minutes or until the tops are lightly golden and the bottoms are toasted
7. Allow the macaroons to cool on the baking sheet for 5 minutes, then transfer to a cooling rack to cool completely
8. Melt chocolate chips in a heatproof bowl set over simmering water, stirring until smooth
9. Dip the bottom of each cooled macaroon into the melted chocolate and tap off excess
10. Place dipped macaroons on parchment and let chocolate set at room temperature
