1. Preheat oven to 350°F (177°C) and line baking sheets with parchment paper.
2. Whisk together flour baking soda ground ginger cinnamon cloves and salt in a bowl.
3. Beat softened butter and brown sugar until light and fluffy.
4. Add egg and molasses and mix until combined.
5. Gradually add dry ingredients to wet ingredients and mix until just combined.
6. Cover dough and chill in the refrigerator for 30 to 45 minutes.
7. Roll dough into tablespoon sized balls and coat each in granulated sugar.
8. Place dough balls two inches apart on prepared sheets and bake for 8 to 10 minutes until tops are cracked.
9. Allow cookies to cool on baking sheets for five minutes then transfer to a wire rack to cool completely.
