  • 2 slices whole-grain bread, toasted
  • 1 ripe avocado, mashed
  • 1/2 cup cooked chicken breast, shredded
  • 2 eggs, poached
  • 1 tbsp pesto (optional)
  • 1 tsp olive oil
  • pinch of black pepper
  • pinch of red chili flakes (optional)
  • 1 lemon wedge

  • Instructions

    1. Toast the bread until golden brown.

    2. Mash the avocado with a fork, season with salt, lemon juice, and olive oil.

    3. Spread mashed avocado evenly on each slice of toast.

    4. Layer shredded chicken breast over the avocado.

    5. Fill a saucepan with 3 inches of water and a splash of vinegar, bring to a gentle simmer.

    6. Crack an egg into a small bowl and gently slide it into simmering water, poach for 3-4 minutes.

    7. Remove the poached egg with a slotted spoon and drain.

    8. Place a poached egg on each prepared toast.
