  • 2 lbs boneless skinless chicken breasts
  • 1 tablespoon chipotle chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 2 cups cooked white or brown rice
  • 1/4 cup chopped cilantro
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels, fresh or canned
  • 2 cups shredded lettuce
  • 1 cup pico de gallo
  • 1 cup guacamole or sliced avocado
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • lime wedges for serving

  • Instructions

    1. In a small bowl, mix chipotle chili powder, smoked paprika, cumin, garlic powder, onion powder, salt, pepper, olive oil, and lime juice to form the Burrito Chicken Seasoning.

    2. Place chicken in a resealable bag or bowl and coat with the seasoning mixture. Marinate for at least 30 minutes or up to overnight in the refrigerator.

    3. Preheat a grill pan or outdoor grill to medium-high heat. Grill the chicken for 5–6 minutes per side, until the internal temperature reaches 165°F.

    4. Remove chicken from the grill and let rest for 5 minutes, then slice against the grain into strips.

    5. In a separate bowl, toss cooked rice with chopped cilantro and a squeeze of lime juice to make cilantro-lime rice.

    6. To assemble each bowl, layer cilantro-lime rice, sliced chicken, black beans, corn, shredded lettuce, pico de gallo, guacamole, cheese, and sour cream.

    7. Garnish with lime wedges and additional cilantro if desired. Serve immediately or pack components separately for meal prep.
