1. Season chicken with salt and pepper and heat olive oil in a large skillet over medium-high heat
2. Sear chicken 4–5 minutes per side until golden, then transfer to a plate
3. Add garlic to the skillet and sauté until fragrant, about 30 seconds
4. Stir in orzo and toast for 1–2 minutes until lightly browned
5. Pour in chicken broth and lemon zest, return chicken to the skillet, bring to a simmer, cover, and cook 10–12 minutes until orzo is al dente
6. Stir in spinach and lemon juice and cook until spinach is wilted
7. Remove from heat and fold in Parmesan until creamy
8. Let rest for 2 minutes, garnish with parsley and extra Parmesan, then serve
