2. Season chicken breasts with salt, pepper, and paprika.
3. Sear the chicken in olive oil over medium-high heat until browned on both sides, about 4 to 5 minutes per side, then set aside.
4. Sauté diced potatoes and onion in the same skillet until potatoes are golden and fork-tender, about 10 minutes.
5. Add minced garlic and cook until fragrant, then pour in chicken broth and scrape up browned bits.
6. Stir in heavy cream and let the sauce simmer until slightly thickened.
7. Return chicken to the skillet among the potatoes and sprinkle with rosemary, thyme, and half of the cheddar cheese.
8. Mix gently, then top with remaining cheddar cheese.
9. Bake in the oven until cheese is melted and bubbly and chicken reaches 165°F, about 20 to 25 minutes.
10. Let the skillet rest for five minutes before serving.
