  • 2 pounds boneless skinless chicken breasts or thighs
  • 1 cup long grain white rice uncooked
  • 2 cans 10.5 oz cream of mushroom soup
  • 1 1/2 cups milk
  • 1 cup chicken broth
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • salt and black pepper to taste
  • 1 cup sliced fresh mushrooms optional
  • 1 cup shredded cheddar cheese optional
  • 1 tablespoon chopped parsley or thyme

  • Instructions

    1. Preheat oven to 350°F and grease a 9×13 inch casserole dish.

    2. In a large bowl whisk cream of mushroom soup, milk, chicken broth, onion powder, garlic powder, salt, and pepper until smooth.

    3. Stir uncooked rice and mushrooms into the sauce mixture.

    4. Arrange chicken pieces on top of the rice mixture in the casserole dish.

    5. Cover tightly with foil and bake for 55 to 65 minutes until rice is tender.

    6. Remove foil, sprinkle cheddar cheese on top if using, and bake uncovered for 10 to 15 minutes more until cheese is melted and bubbly.

    7. Let the casserole rest for 10 minutes, garnish with parsley or thyme, then serve warm.
