1. Preheat the oven to 375°F (190°C).
2. Cut the tops off the bell peppers and remove the seeds and membranes.
3. Heat olive oil in a skillet over medium heat and sauté onion and garlic until translucent.
4. Add chicken, oregano, paprika, salt, and pepper and cook until heated through.
5. Stir in rice and tomato sauce and cook until the mixture is well combined.
6. Spoon the filling into each pepper and top with shredded cheese.
7. Place peppers upright in a baking dish with 1/4 cup water or broth, cover with foil, and bake for 25 minutes.
8. Remove foil and bake for 10–15 minutes more until peppers are tender and cheese is golden.
