This comforting recipe features jumbo pasta shells filled with a creamy mixture of ricotta, shredded chicken, and spinach, then baked in marinara and melted mozzarella. It’s an easy, family-friendly dinner perfect for busy weeknights.

1. Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
2. Cook pasta shells in salted boiling water until al dente, drain and rinse under cold water to stop cooking.
3. In a bowl combine shredded chicken, ricotta, half of the mozzarella, spinach, garlic, salt, and pepper until smooth.
4. Spread a thin layer of marinara sauce on the bottom of the baking dish.
5. Spoon the filling into each shell and arrange them open side up in the dish.
6. Pour remaining marinara sauce over the shells and sprinkle with the rest of the mozzarella and Parmesan if using.
7. Cover with foil and bake for 20 minutes, then remove foil and bake an additional 10–15 minutes until cheese is melted and golden.
8. Let rest for 5 minutes before serving, garnish with fresh parsley or basil if desired.
