  • 1.5 lbs boneless skinless chicken thighs or breasts, cut into chunks
  • 2 medium sweet potatoes, peeled and cubed
  • 2 cans (13.5 oz each) full fat coconut milk
  • 23 tbsp red or yellow curry paste
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp olive oil or coconut oil
  • 1 tbsp lime juice
  • salt and pepper to taste
  • fresh cilantro or Thai basil for garnish
  • optional vegetables such as bell peppers, spinach, or peas

  • Instructions

    1. Heat oil in a heavy-bottom pot over medium heat and sauté onion until translucent

    2. Add garlic and ginger and cook for one minute until fragrant

    3. Stir in curry paste and cook for two minutes, stirring constantly

    4. Add chicken and stir to coat with the curry mixture, cooking until opaque

    5. Add sweet potatoes and coconut milk, then bring to a gentle simmer

    6. Cover partially and cook for 15–20 minutes until potatoes are tender and chicken is cooked through

    7. Season with salt, pepper, and lime juice, adding water or broth if needed to adjust consistency

    8. Stir in chopped cilantro or basil before serving
