Description

This comforting slow cooker curry combines tender chicken with sweet potatoes in a fragrant, mildly spiced coconut sauce. It’s an easy, wholesome dinner that’s perfect for busy weeknights or cozy winter meals.

  • 1.5 pounds boneless skinless chicken breasts or thighs, cut into pieces
  • 2 large sweet potatoes, peeled and cubed
  • 1 medium onion, sliced
  • 2 carrots, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 2 tablespoons curry powder
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 can (14 ounces) coconut milk
  • 1 cup chicken broth
  • Salt and pepper to taste
  • 1 tablespoon lime juice
  • 2 cups fresh spinach (optional)
  • Fresh cilantro for garnish

  • Instructions

    1. Place sweet potatoes, carrots, and onion in the crockpot.

    2. Add chicken pieces on top of the vegetables.

    3. Stir in garlic, ginger, curry powder, turmeric, cumin, salt, and pepper.

    4. Pour coconut milk and chicken broth over the ingredients.

    5. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours.

    6. Stir in lime juice and fresh spinach during the last 10 minutes of cooking.

    7. Adjust seasoning with salt and pepper if needed.

    8. Serve over rice or quinoa and garnish with cilantro.
