1. Heat olive oil in a large pot over medium heat
2. Add garlic, ginger, and onion and sauté for 3–4 minutes until fragrant
3. Place chicken in the pot, pour in broth, season with salt and pepper, bring to a boil, then simmer covered for 20–25 minutes
4. Remove chicken and shred with forks, then set aside
5. Add celery, zucchini, and cabbage to the broth and cook for 10 minutes
6. Stir in broccoli and spinach and cook for 3–4 minutes until bright and tender
7. Return shredded chicken to the pot, stir in lemon juice and parsley, adjust seasoning and red pepper flakes
8. Simmer for 3–5 more minutes, then ladle into bowls and serve hot
