1. Cook quinoa and let it cool, then fluff with a fork.
2. Heat oil in a wok or non-stick skillet over medium-high heat and cook diced chicken until golden, about 5–6 minutes, then remove and set aside.
3. In the same pan, sauté onion and garlic until fragrant, about 30 seconds, then add mixed vegetables and stir-fry until crisp-tender, 3–4 minutes.
4. Return chicken to the pan, add cooled quinoa, and stir to combine. Let sit undisturbed for 1–2 minutes to develop slight crispiness.
5. Push mixture to one side, scramble eggs in the open space, then fold into the quinoa mixture. Drizzle soy sauce evenly and stir until coated.
6. Remove from heat, garnish with green onions and sesame seeds, and serve immediately.
