Chinese Beef and Broccoli

Description

Tender, velvety beef and crisp-tender broccoli tossed in a glossy garlic–ginger sauce. This Chinese beef & broccoli is weeknight-fast, one-pan, and better than takeout—ready in about 20 minutes.

BEEF & MARINADE

1 lb (450g) flank or sirloin steak, thinly sliced against the grain

1 tbsp soy sauce (or tamari)

1 tbsp oyster sauce

1 tsp cornstarch

1/2 tsp sugar

1/2 tsp sesame oil

Pinch white pepper

Optional: 1/4 tsp baking soda (for extra tenderness)

SAUCE

1/3 cup low-sodium beef broth (or water)

2 tbsp soy sauce (or tamari)

1 tbsp oyster sauce

1 tbsp brown sugar or honey

1 tsp rice vinegar

2 tsp cornstarch

STIR-FRY

23 tbsp neutral oil (avocado/peanut)

3 cups broccoli florets (about 300g)

3 garlic cloves, finely minced

1 tbsp fresh ginger, finely minced

23 green onions, sliced (divided)

1/4 tsp red pepper flakes (optional)

Finish: 1 tsp sesame oil + sesame seeds (optional)


Instructions

1. In a bowl, toss beef with soy, oyster sauce, cornstarch, sugar, sesame oil, white pepper, and baking soda if using. Rest 10–15 minutes.

2. Whisk the sauce: broth, soy, oyster, sugar, rice vinegar, and cornstarch; set aside.

3. Heat 1 tbsp oil in a large skillet/wok over medium-high. Stir-fry broccoli with a pinch of salt 2–3 minutes until bright and crisp-tender; add a splash of water if needed. Transfer to a plate.

4. Add 1–2 tbsp oil. Sear beef in an even layer 60–90 seconds per side until just browned (work in 2 batches if needed). Return all beef to the pan.

5. Push beef to the sides; add garlic, ginger, and half the green onions; sauté 20–30 seconds until fragrant.

6. Whisk sauce again and pour in; simmer 30–60 seconds, tossing, until thick and glossy.

7. Return broccoli; toss to coat. Off heat, finish with sesame oil. Adjust seasoning to taste.

8. Serve hot with rice or noodles; top with remaining green onions (and sesame seeds).

Notes

Make it gluten-free: use tamari and a GF oyster-style sauce.

Extra veg: add sliced mushrooms, snap peas, or carrots (cook with broccoli).

Meal prep: keeps 3–4 days au frigo; réchauffe avec un trait d’eau.

Tenderness tip: slice steak very thinly against the grain; a brief 10–15 min marinade with a pinch of baking soda helps.
