1. Wash, hull, and chop strawberries, then pat dry.
2. In a blender or food processor, pulse oats, protein powder, chia or flaxseed, and sea salt until oats are finely ground.
3. Add chopped strawberries, almond butter, and honey, then blend until a dough forms.
4. Scoop tablespoon-sized portions and roll into balls, placing them on a parchment-lined baking sheet.
5. Refrigerate bites for 15 minutes to firm.
6. Melt dark chocolate chips with coconut oil in 20-second microwave intervals or a double boiler until smooth.
7. Dip each chilled bite into melted chocolate, let excess drip off, and return to the sheet.
8. Chill for 20 minutes or until chocolate is set, then store in an airtight container.
