4. Cover the mixture and refrigerate for 1–2 hours, until firm.
5. Scoop chilled ganache with a melon baller and roll into 1-inch balls between your palms.
6. Roll each truffle in crushed candy canes or dip in melted white chocolate and let set on parchment paper.
7. Chill completed truffles for 15 minutes before serving or packaging.
