2. Pour in milk, yogurt or applesauce, sweetener and vanilla extract then mix until a smooth batter forms.
3. If batter is too thick, add an extra teaspoon of milk; if too thin, sprinkle in a bit more flour.
4. Microwave on high for 60 seconds and check the center; if still wet, heat in 10-second intervals until set but springy.
5. Let the mug cake rest for 30–60 seconds to finish cooking and cool slightly.
6. Top with yogurt, nut butter or sugar-free chocolate chips and enjoy warm.
