  • 6 cups mixed greens (spinach kale or arugula)
  • 2 medium Honeycrisp apples chopped
  • 3/4 cup feta cheese crumbled
  • 1/2 cup toasted pecans or walnuts
  • 1/3 cup dried cranberries
  • 1/4 small red onion thinly sliced
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • salt and pepper to taste

  • Instructions

    1. Place mixed greens in a large bowl.

    2. Add chopped apples red onion and dried cranberries.

    3. Sprinkle crumbled feta and toasted nuts over the salad.

    4. In a small bowl whisk olive oil apple cider vinegar honey Dijon mustard salt and pepper until emulsified.
