1. Preheat oven to 350°F and grease a 9×13-inch baking dish.
2. In a large skillet, melt butter over medium heat and sauté onion, celery, and celery leaves until soft, about 8 minutes.
3. Stir in sage, thyme, parsley, salt, and pepper and cook 1 minute more.
4. Place bread cubes in a large bowl and pour vegetable mixture over them, tossing to coat.
5. Whisk broth and eggs in a separate bowl and gradually pour over bread, tossing gently until evenly moistened.
6. Fold in diced potato if using and let mixture rest 5 minutes.
7. Transfer stuffing to the prepared dish and cover with foil.
8. Bake covered for 30 minutes, then remove foil and bake 20 more minutes until top is golden and crisp.
9. Let rest 10 minutes before serving.
