1. Combine chicken and chopped carrots, celery, onion, and garlic in a large stockpot
2. Pour in cold water to cover and bring to a gentle boil, skimming off any foam
3. Add bay leaves, thyme, and peppercorns, then reduce heat to a simmer and cook for 1 1/2 to 2 hours
4. Remove chicken and vegetables, strain the broth through a fine-mesh strainer, return broth to the pot
5. Shred the cooled chicken, discarding bones and skin
6. Heat oil or butter in the pot over medium heat and sauté sliced carrots and celery until slightly tender
7. Add the strained broth and bring it to a simmer, season with salt and pepper
8. Stir in noodles and cook until al dente, about 5-7 minutes
9. Add shredded chicken and heat through for 2-3 minutes
10. Stir in chopped parsley and lemon juice if using, adjust seasoning to taste
11. Ladle the soup into bowls and serve hot
