Description

This vibrant salad combines roasted beets, creamy goat cheese, and crunchy walnuts tossed in a tangy balsamic dressing. It makes a versatile dish perfect as a light meal or festive side.


Ingredients

  • 4 medium fresh beets (about 1 lb / 450 g)
  • 2 tbsp olive oil
  • 3 tbsp balsamic vinegar
  • 4 cups mixed greens (arugula, spinach, or spring mix)
  • 1/2 cup crumbled goat cheese
  • 1/2 cup toasted and chopped walnuts
  • 1/4 cup raisins or dried cranberries
  • salt and pepper to taste
  • 1 tsp honey or maple syrup (optional)

  • Instructions

    1. Preheat the oven to 400°F (200°C), trim beet greens, scrub and dry the beets.

    2. Wrap each beet in foil and roast on a baking sheet for 40–50 minutes until tender.

    3. Allow roasted beets to cool for 10–15 minutes, then peel and slice or cube them.

    4. Whisk together balsamic vinegar, olive oil, honey or maple syrup, salt, and pepper to make the dressing.

    5. Toast walnuts in a dry skillet over medium heat for 3–5 minutes until fragrant.

    6. In a large bowl, layer mixed greens, add roasted beets, goat cheese, walnuts, and raisins or cranberries.

    7. Drizzle the dressing over the salad and toss gently before serving.
