This salad features sweet roasted beets, creamy goat cheese, crunchy walnuts and a tangy balsamic vinaigrette. It’s a colorful, nutrient‐rich dish perfect for holidays or everyday meals.

Instructions
1. Preheat oven to 400°F (200°C).
2. Trim and scrub beets, wrap each in foil with a drizzle of olive oil and a pinch of salt. Roast on a baking sheet for 40–50 minutes until tender.
3. Let beets cool, then rub off skins with a paper towel and slice into wedges.
4. Whisk together balsamic vinegar, Dijon mustard, honey, remaining olive oil, salt and pepper until emulsified.
5. Toss mixed greens with half the dressing in a large bowl.
6. Arrange beet slices over greens, sprinkle with toasted walnuts, raisins and crumbled goat cheese.
7. Drizzle remaining dressing over the salad and serve warm or chilled.
