1. Heat olive oil in a large pot over medium heat and sauté onion and garlic until fragrant.
2. Add carrots, celery, and zucchini and cook for 3–4 minutes until slightly softened.
3. Pour in chicken broth and add chicken breasts, bringing the mixture to a gentle boil.
4. Stir in cumin, turmeric, oregano, salt, and pepper and reduce heat to a simmer.
5. Cover and cook for 25–30 minutes until chicken is fully cooked and vegetables are tender.
6. Remove chicken, shred it with forks, and return it to the pot.
7. Add spinach and lime juice and simmer for 5 minutes until greens wilt.
8. Taste and adjust seasoning, then ladle into bowls and garnish with cilantro.
