Description

This light and creamy turkey and wild rice soup transforms leftover turkey into a nourishing meal with a velvety broth and nutty grains. It’s versatile, comforting, and perfect for cozy dinners or make-ahead lunches.

  • 2 tablespoons butter or olive oil
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 garlic cloves, minced
  • 6 cups low-sodium turkey or chicken broth
  • 1 bay leaf
  • 1 teaspoon fresh thyme leaves
  • 1 cup wild rice, rinsed
  • 2 cups cooked turkey, shredded
  • 1/2 cup half-and-half (or milk, or coconut milk for dairy-free)
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped

  • Instructions

    1. Cook the wild rice separately in lightly salted water until tender, about 35 to 45 minutes, then drain and set aside.

    2. Heat butter or oil in a large pot over medium heat and sauté onion, carrots, and celery until softened, about 5 to 7 minutes.

    3. Add garlic and cook for an additional minute until fragrant.

    4. Pour in the broth, add bay leaf and thyme, bring to a gentle simmer and cook for 10 minutes.

    5. Stir in the cooked wild rice and shredded turkey and simmer for another 10 minutes to heat through.

    6. Reduce heat to low, stir in half-and-half (or chosen creamy substitute) and warm gently without boiling.

    7. Season with salt and pepper, remove bay leaf, and adjust seasoning as needed.

    8. Ladle soup into bowls and garnish with chopped parsley before serving.
