1. Heat olive oil in a large heavy-bottomed pot over medium heat.
2. Add chicken pieces in a single layer and brown 4 to 5 minutes per side then remove and set aside.
3. Add chopped onion, celery, and carrots to the pot and sauté until vegetables are soft and onions are translucent.
4. Stir in minced garlic and cook for one minute until fragrant.
5. Pour in half a cup of chicken broth and scrape up browned bits from the bottom of the pot.
6. Return the chicken to the pot and add remaining broth, diced potatoes, bay leaf, thyme, salt, and pepper.
7. Bring stew to a light boil then reduce heat to low, cover, and simmer for 25 to 30 minutes until chicken is cooked through and vegetables are tender.
8. Remove the bay leaf, stir in fresh parsley, adjust seasoning if needed, and serve hot.
