1. Heat olive oil in a large pot over medium heat
2. Season chicken with salt and pepper and brown on both sides then remove
3. Add onion carrots and celery and cook until softened
4. Stir in garlic and mushrooms and cook until fragrant
5. Pour in chicken broth then add wild rice thyme sage and bay leaf
6. Return chicken to the pot and bring to a simmer
7. Cover partially and cook until rice is tender and chicken is cooked through
8. Remove chicken and shred then return to the soup
9. Stir in cream if using and adjust seasoning
10. Garnish with parsley before serving
