1. Heat olive oil in a large pot over medium heat
2. Add diced onion and sauté until translucent

4. Add italian herbs, salt, pepper and vegetable broth, then add beans
5. Bring to a boil, reduce heat and simmer for 10 minutes
6. Use an immersion blender to puree half the soup for creaminess
7. Stir in coconut milk and kale and simmer until kale is tender
8. Adjust seasoning with salt, pepper and lemon juice
9. Ladle into bowls and garnish with nutritional yeast or olive oil drizzle
