Description

This creamy tuscan white bean soup with kale is a warm, hearty vegan comfort food perfect for cool evenings. It combines tender beans, leafy greens, and aromatic herbs in a velvety broth.


Ingredients

  • 2 cans (15 oz each) cannellini beans, drained and rinsed
  • 4 cups chopped kale
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 cup sliced mushrooms
  • 4 cups vegetable broth
  • 1 cup full-fat coconut milk
  • 1.5 tsp dried italian herbs
  • 1 sprig fresh rosemary (optional)
  • salt and black pepper to taste
  • 1 tbsp lemon juice
  • 2 tbsp nutritional yeast (optional)

  • Instructions

    1. Heat olive oil in a large pot over medium heat

    2. Add diced onion and sauté until translucent

    3. Stir in garlic and mushrooms and cook until fragrant

    4. Add italian herbs, salt, pepper and vegetable broth, then add beans

    5. Bring to a boil, reduce heat and simmer for 10 minutes

    6. Use an immersion blender to puree half the soup for creaminess

    7. Stir in coconut milk and kale and simmer until kale is tender

    8. Adjust seasoning with salt, pepper and lemon juice

    9. Ladle into bowls and garnish with nutritional yeast or olive oil drizzle
